HOORAY FOR MY IRISH HERITAGE!!!
Oh, wait. I am exactly 0% Irish.
But, good news! There is a special day in March when everyone can claim they’re Irish. We all wear green and say things like “Kiss me! I’m Irish!” when we’re actually French and Austrian. Keep it on the DL.
And luckily, it’s the same deal with food. Good thing, too, since Irish food isn’t exactly vegan-friendly. Or Victoria-friendly. True Life: I hate potatoes. Sorry.

Green Shamrock Shakes!
And YAY! Mine is a play on the healthy Green Smoothie. Double Green. DOUBLE WIN.
Shamrock Shake
1 cup almond milk
2 cups spinach leaves
1/4 package lite tofu
2 tsp vanilla extract
drop of peppermint extract
stevia to taste
walnut whipped cream (optional)
Blend the almond milk, spinach leaves, tofu, vanilla, peppermint together until smooth. Pour into glass and swirl in or top with walnut whipped cream.
