Caramel Corn Milkshake

Before you run away screaming, you should know that this is, by far, my favorite milkshake/smoothie I’ve made to date. I mean it. And P.S., it’s healthy. I gulped it down in .5 seconds.

Also, in my effort to up my protein intake, the main thickener in this for me was silken tofu. If you try to avoid soy, it can easily be substituted with non-fat greek yogurt or vegan yogurt.

Caramel Corn in drink form sounds a little odd, but trust me when I say you need to make this right now. And then again. And again. You’ll feel like you’re a little kid at a Halloween carnival. And isn’t it a nice a nice little break from all the pumpkin madness?

Caramel Corn Milkshake 

1 cup almond milk

1 cup popped NATURAL popcorn (unsalted and unbuttered!)

1/5 package of firm silken tofu or ¼ cup yogurt

2 tbsp date syrup or your choice of caramel

1 tbsp vanilla extract

pinch of guar gum (optional, for a thicker smoothie)

Stevia to taste (for an extra sweet shake)

Put all ingredients except popcorn in blender and blend. Add the popcorn, and blend until smooth. Garnish if you would like with a drizzle of caramel.
